    What is Gelatin, anyway?

Gelatin is the protein-packed byproduct that comes from cooking the collagenous joints, tendons, and connective tissue of an animal.     The boiling process of collagen breaks down into gelatin and produces the translucent, flavorless substance that turns to gel once it is cold. You may also notice it when you see your leftover beef soup gelling over a bit.

    Gelatin carries many of the health benefits of collagen. Both contain similar amino acids that are essential for our bodies; however, it is necessary to clarify that gelatin and collagen have differences. When hydrolyzed, the protein in collagen breaks down into smaller pieces and dissolves in hot or cold liquids. In contrast, beef gelatin dissolves quickly into hot liquids but gels or thickens in cold liquids.
