    What is Gelatin, anyway?

    If we said animal skin, bones, and cartilages, you might be ready to stop reading, and we get it. It may sound a bit odd, but you will want to read on. Gelatin is the protein-packed byproduct that comes from cooking the collagenous joints, tendons, and connective tissue of an animal. Collagen, the most prominent protein in the body, is responsible for the infrastructure of the musculoskeletal system. It is the building material that renews cells in the body. Simply put, out with the old cells and in with the new.  

    The boiling process of collagen breaks down into gelatin and produces the translucent, flavorless substance that turns to gel once it is cold. It is present in many things we eat such as gummy bears, fruit snacks, even some cereals, but is most commonly known to be present in Jello-O. You may also notice it when you see your leftover beef soup gelling over a bit.

    Gelatin carries many of the health benefits of collagen. Both contain similar amino acids that are essential for our bodies; however, it is necessary to clarify that gelatin and collagen have differences. When hydrolyzed, the protein in collagen breaks down into smaller pieces and dissolves in hot or cold liquids. In contrast, beef gelatin dissolves quickly into hot liquids but gels or thickens in cold liquids.

    Amino Acids

    The 18 amino acids found in gelatin drive the positive benefits that make gelatin a must-have. You can expect to find valine, arginine, alanine, and lysine in gelatin, amongst many others. Many of these amino acids, such as glycine and proline, are essential for our bodies, however, most people do not get enough of them; especially as we age. Glycine and proline are two essential amino acids that are responsible for the fibrous structure of collagen. When we lack the two, we begin to show common signs of aging in the body and the skin. This is the reason why many look at gelatin as an anti-aging secret weapon in their combat against fine lines and wrinkles and other aging signs.
